Roman chamomile was used by ancient civilizations such as the Egyptians, Greeks, and Romans not only as a healing herb but also in rituals, as they believed it offered protection and purification.
Despite its similar name, Roman chamomile has significant differences from German chamomile (Matricaria chamomilla). Roman chamomile has a more intense, fruity aroma and contains different active compounds, while its flowers are larger and more textured.
In addition to its traditional uses in beverages and aromatherapy, Roman chamomile is used in cooking as a flavoring in sweets and drinks, and in Britain it is grown specifically to create aromatic chamomile lawns that release their scent when stepped on.
