Description
Korintje SFE (Supercritical Fluid Extraction) is a lesser-known cinnamon variety compared to Ceylon Cinnamon EO and Cassia EO, though it shares similar uses. This variety stands out for the absence of Eugenol in its composition, and its price falls between that of Ceylon cinnamon and Chinese cassia.
Korintje cassia CO2 is considered the sweetest and most flavorful cinnamon variety by the ScenTree team, making it an ideal choice when the goal is to achieve sweet and savory notes rather than woody or spicy ones.
It is worth noting that oil obtained from the hydrodistillation of Cinnamomum burmanni leaves contains high levels of safrole (>90%), making it unsuitable for perfumery. This significantly limits buyer interest in this variety and explains the smaller production volume for the fragrance industry.
Despite these limitations, the Cinnamomum burmanni variety remains highly valued by food flavorists. Products derived from the bark of various Cinnamomum varieties may be subject to adulteration through the addition of synthetic Cinnamaldehyde.
From a botanical perspective, Korintje cassia is a tree belonging to the Lauraceae family and the genus Cinnamomum.
Additional information
Bark and leaf contrast: While Korintje bark is used in perfumery, its leaves are entirely unsuitable due to a safrole content exceeding 90%!
Despite its limitations in perfumery, Cinnamomum burmanni is particularly popular in the food industry where flavorists value it for its sweet, savory notes.
The name Korintje originates from the Kerinci region of Sumatra in Indonesia, where this cinnamon variety is traditionally cultivated. It has been an important export product of the region for centuries.
