Gamma-decalactone is one of the primary compounds responsible for the characteristic aroma of peaches. When you smell a ripe peach, this ingredient is what lets you experience the fruit through your nose.
The prefix "gamma" in its name refers to the specific molecular structure that gives it its unique scent profile. This structure dictates how it interacts with olfactory receptors in the human nose.
Gamma-decalactone is such a potent aromatic compound that the human nose can detect it at extremely low concentrations, just a few parts per billion. This means a single drop could theoretically scent an entire swimming pool.
