The characteristic aroma of cognac is due in part to the presence of heptanal, which forms during the aging process in wooden barrels.
Heptanal is found in strikingly diverse natural sources, from citrus fruits and strawberries to hyacinth and narcissus flowers, demonstrating how the same aromatic compound can contribute to completely different scent profiles.
Perfumers use heptanal as a bridge between different fragrance notes, as its complexity allows fruity, floral and woody elements to connect within a harmonious composition.
