Acetaldehyde plays a central role in alcohol metabolism in our bodies. When we consume alcoholic beverages, the liver converts ethanol into acetaldehyde, which is then metabolized further. The accumulation of this substance is responsible for many of the unpleasant symptoms of a hangover after drinking alcohol.
During the fruit ripening process, the concentration of acetaldehyde increases naturally, contributing to the characteristic aroma of ripe fruit. This is one reason fully ripe fruit has a more intense and sweet scent compared to unripe fruit.
The human detection threshold for acetaldehyde is extremely low at just 0.05 parts per million in air. This means we can perceive its presence even in minute quantities, making it a particularly potent fragrance ingredient.
The IFRA Standards form an industry self-regulatory system. They may prohibit or restrict the use of particular fragrance ingredients, or set specifications, according to end use. The status below reflects the IFRA data recorded for this ingredient. It is not a product certification and does not replace applicable law or assessment of the finished product.
