The name "tarragon" comes from the Arabic word "tarkhun", meaning "little dragon", while its scientific name, Artemisia dracunculus, also references the dragon (dracunculus = little dragon in Latin). This naming likely stems from the shape of the plant's root or the traditional belief that it could cure snakebites.
While tarragon is valued in perfumery for its woody and earthy notes, in gastronomy it is one of the four "fine herbs" of French cuisine, alongside parsley, chives, and chervil, offering a subtle anise-like aroma.
The distinctive aromatic identity of tarragon oil is mainly due to the presence of the chemical compound estragole, which makes up 60-75% of its composition and is responsible for the perceived anise notes.
