Sichuan pepper causes a unique tingling sensation on the tongue, completely different from the heat of black pepper. This sensation comes from a compound called hydroxy-alpha-sanshool.
Despite its name, Sichuan pepper is not related to black pepper, but belongs to the citrus family (Rutaceae) alongside oranges and lemons.
In traditional Chinese medicine, Sichuan pepper has been used for centuries to treat stomach aches, combat parasites, and relieve toothaches.
