Tonka beans come from the Dipteryx odorata tree of the legume family (Fabaceae), a relative of common beans and peas.
In its native regions, the tonka bean has traditional uses beyond perfumery. It is used in local cuisines to flavor desserts, beverages, and tobacco, while traditional medicine ascribes antispasmodic and antipyretic properties to it.
Tonka beans contain coumarin, an aromatic compound that gives them their characteristic scent. Coumarin is also found in other plants such as lavender, clover, and cinnamon, and serves as a base for creating synthetic vanilla fragrances.
