Benzothiazole contributes to the characteristic aroma of cooked vegetables such as broccoli and asparagus. The same compound used in fragrances is responsible for the earthy, rich notes that emerge from vegetables on your table!
While you enjoy a plate of aged cheese, the tasting experience is enriched by small amounts of Benzothiazole that develop naturally during the aging process. The same ingredient that adds depth to fragrances also brings complexity to the culinary profile of cheeses.
Despite its potent nature, Benzothiazole is used in minute quantities in perfumery, often at ratios of a few parts per million. Perfumers handle it with precision, as even the slightest amount can transform an entire fragrance composition.
