- l-Carvone and d-Carvone are optical isomers, mirror-image molecules much like the left and right hand. Although chemically similar, our nose perceives them entirely differently!
- l-Carvone accounts for the characteristic aroma of spearmint, while its counterpart, d-Carvone, gives caraway its distinct scent. Two nearly identical molecules, two entirely different aromas!
- The name carvone derives from the Latin name for caraway, Carum carvi, highlighting the long and rich history of this aromatic ingredient in botany and the art of perfumery.
