Isobutyric acid is one of the key components that gives aged cheeses, such as Roquefort and Gorgonzola, their characteristic aroma. While it may seem intense in its pure form, it becomes part of a complex flavor experience in gastronomy.
Despite its strong cheesy scent, perfumers use Isobutyric acid in extremely small quantities in fine fragrances, where it acts as a hidden ingredient that adds depth and complexity.
In brewing, Isobutyric acid contributes to the characteristic aroma of hops, a key ingredient in beer. Thus, the same molecule found in cheese also participates in the aroma of your favorite drink.
