Additional information
4-Methyl-2-pentanone is found in a surprisingly diverse range of foods, from your morning coffee and eggs to the citrus fruits and plums in your dessert.
It is one of the 800+ aromatic compounds that make up the complex aroma of coffee, contributing to the characteristic fruity notes we recognize in a freshly brewed cup.
When you enjoy a beer, part of the characteristic flavor of the hops is due to this molecule, which develops naturally during the fermentation process.
