Bees use isoamyl acetate as an alarm pheromone to alert other bees to danger. When a bee stings, it releases this substance to warn the hive.
In the fragrance and flavor industry, this ingredient is also known as banana oil, even though it is not a true oil extracted directly from bananas.
Beyond fragrances, isoamyl acetate is widely used in food and beverage flavors, imparting the characteristic banana taste to daily consumed sweets, ice creams, and soft drinks.
