Biphenyl has an interesting chemical structure consisting of two connected benzene rings, resembling two hexagons joined side by side. This arrangement is what gives it its specific blending properties.
Beyond fragrances, biphenyl has historical uses in citrus preservation. Since the 1940s, it has been used as a fungicide in the packaging of oranges and lemons to prevent mold during transport and storage.
Biphenyl appears naturally in more plants than one might think. Aside from sage, it can be found in small quantities in certain types of tea, in the hops used in brewing beer, and in some essential oils.
