The word "butyric" has its roots in the ancient Greek word "boutyron", demonstrating how the language of the ancient Greeks continues to influence scientific terminology today.
Butyric acid has a dual nature in scent perception: at low concentrations, it imparts pleasant gourmand notes to fragrances, while at higher concentrations, it can strongly evoke the scent of rancid butter or vomit!
During cheese maturation, butyric acid develops naturally and plays a decisive role in the characteristic aroma and flavor of many traditional cheeses, particularly hard and blue varieties.
