Description
Cis-6-Nonenal is an ingredient widely used to create fruity fragrances with cucumber and melon notes. It brings a distinct aquatic dimension to fruity blends and perfumes, while also helping build violet leaf notes. It is one of the key compounds that shape the characteristic scent of melon and cucumber in nature. Beyond these, it occurs naturally in certain fish species and the exotic pepino dulce fruit.
Cis-6-Nonenal is a very potent ingredient with an extremely low human olfactory detection threshold. For this reason, it must be used in dilution when formulating fragrances. Compared to its relative trans-2-cis-6-Nonadienal, Cis-6-Nonenal is used more for creating melon scents, whereas trans-2-cis-6-Nonadienal captures cucumber notes better.
Additional information
Cis-6-Nonenal has such a low detection threshold that the human olfactory system can spot it even at concentrations of a few parts per billion. This is like spotting a single drop in an entire Olympic-size swimming pool.
The pepino dulce (sweet cucumber), which naturally contains Cis-6-Nonenal, is an exotic South American fruit that looks like an eggplant yet tastes like a blend of melon and pear. Despite its name, it has no relation to the cucumber.
The presence of Cis-6-Nonenal in fresh fish contributes to their characteristic aroma. However, as fish begin to spoil, this compound transforms into other substances that cause the unpleasant odor of non-fresh fish.
