Hexanal occurs naturally in many foods we consume daily, such as apples, cucumbers, strawberries and citrus fruits. Whenever you enjoy these fruits, part of their aroma comes from the presence of hexanal!
The characteristic scent of freshly cut grass that we notice immediately after mowing the lawn is due primarily to the release of hexanal. It is a chemical defense reaction triggered when the plant is injured.
Researchers have found that hexanal can help extend the shelf life of fruit when applied after harvest. This property makes it valuable not only in perfumery but also in the food industry for reducing food waste.
