Black pepper was once so valuable that it was used as currency and served as a staple commodity along trade routes between Asia and Europe. The Romans called it black gold.
The characteristic spicy flavor and aroma of black pepper come from piperine, a compound that stimulates heat receptors in the mouth and nose in a way similar to capsaicin in chili peppers.
Black pepper remains the most widely distributed spice worldwide, with annual production exceeding 400,000 tons. Vietnam, Indonesia, and India are the largest producers globally.
