Although found naturally in berries and whiskey, diethyl malonate smells like freshly cut apple - a natural paradox that surprises perfumers!
It serves as an aromatic "bridge" between the worlds of alcoholic beverages and fruit, as it appears in cognac and wine as well as fruits such as grapes and pineapple.
Laboratory production of the ingredient can be more environmentally friendly than extracting it from natural sources, as it requires fewer resources and reduces pressure on natural ecosystems.
