Ethyl nonanoate is found in more than 30 different natural sources, ranging from exotic fruits like carambola and pineapple to everyday foods like wheat bread.
This aromatic compound plays an important role in the characteristic aroma of fermented foods and beverages. When enjoying a glass of wine, beer, or tequila, part of the aroma experience is due to ethyl nonanoate.
Although often associated with sweet fruits, ethyl nonanoate is also found in unexpected sources such as truffles, olives, and the traditional Chinese alcoholic beverage baijiu!
