Black pepper owes much of its characteristic aroma to sabinene, as it is one of the main components of its essential oil.
Sabinene belongs to the family of bicyclic monoterpenes, with a chemical structure that gives it its distinct olfactory signature. This structure is responsible for the characteristic spicy and woody note it imparts to fragrance compositions.
In traditional healing practices of various cultures, sabinene-rich plants were used for their anti-inflammatory and antimicrobial properties, long before scientists discovered and identified the specific molecule.
