Cardamom is the third most expensive spice in the world, after saffron and vanilla, due to the labor required for harvesting and its limited growing season.
Ancient Egyptians used cardamom in perfumes and incenses 4,000 years ago, while in ancient Greece and Rome it was valued for its therapeutic properties.
There are two main varieties of cardamom with different aromatic profiles: green cardamom (harvested before maturity) has a delicate, sweet scent, while black cardamom (dried over a fire) has a smokier, more intense character.
