Compared to its related ingredient Acetoin, Diacetyl is more widespread in perfumery and features higher aromatic strength, making it effective even at low concentrations.
Diacetyl is responsible for the characteristic buttery aroma of movie theater popcorn! It was widely used as a flavor additive in microwave popcorn, creating that unforgettable scent.
Chemically, Diacetyl is known as 2,3-butanedione and belongs to the diketone family. Its simple molecular structure belies its impressive ability to impart rich flavor and aromatic properties.
