Octyl acetate contributes to the characteristic aroma of citrus peels. When you peel an orange and notice that intense, fresh scent, part of that experience is due to octyl acetate.
The prefix "octyl" in its name comes from the Latin word "octo" meaning eight, referring to the eight-carbon chain in its molecular structure.
Octyl acetate belongs to the ester family, chemical compounds responsible for many fruity aromas in nature. Different esters give different fruits their characteristic scents, creating a natural vocabulary of fragrances.
