2-Acetylthiazole is one of the key components that give freshly popped popcorn its characteristic aroma. Even in tiny amounts, it can transform a fragrance by adding warm, sweet notes.
Although associated with popcorn and nuts, this ingredient is also found naturally in seafood such as shrimp and mussels, an unexpected culinary connection between entirely different foods.
Our sense of smell is extremely sensitive to this ingredient, as we can detect 2-Acetylthiazole at concentrations as low as parts per billion. This is one of the reasons it is used so effectively in fragrances and flavors.
The IFRA Standards form an industry self-regulatory system. They may prohibit or restrict the use of particular fragrance ingredients, or set specifications, according to end use. The status below reflects the IFRA data recorded for this ingredient. It is not a product certification and does not replace applicable law or assessment of the finished product.
