Ethyl octanoate is found in more than 50 different natural sources, ranging from exotic fruits like cherimoya and soursop to everyday foods like apple and cheese.
Winemakers consider ethyl octanoate to be one of the key components of the aromatic profile of wines. It contributes to the fruity notes of many white wines and is a major element in the aroma of cognac and other distilled spirits.
The same molecule used in fragrances is also used in the food industry as a flavoring additive, creating fruity notes in various products. Its perception can vary significantly depending on its concentration, offering sweet, fruity notes at low concentrations, while evoking cognac or cream more strongly at higher ones.
